Yummy Mango Delight ~ Frozen cheese cake with oreo cookies base come together with home-cooked mango puree on the top ~_^ My First Trial....i did googling and googling,..looking for a variety and convenience..since I am studying in Makassar, Indonesia, somehow it's hard for me to look for the ingredients..so what i did..i look for the things that can be substitute..and in the end i come out with my own recipes.. The recipe: 1 1/2 cups oreo biscuits (grounded/blended) 1/2 cup butter (melted) 2 cups cream cheese (spreadable ricotta cheese can be used as well) 1 tbsp lime / lemon juice 1 cup fine sugar 1/2 cup heavy whipped cream 1 tbsp vanilla extract 1 1/2 cups water 10g agar-agar 1 cup mango puree (pure mango puree without preservatives ~_^) 1 mango (peeled, chopped, pureed) 2 tbsp water 2 tbsp sugar 1 tbsp lime/lemon juice METHOD Base Grease a 20cm springform cake tin and line with baking paper. Crush biscuits in a food processor (blender) until they resemble fine crumbs. Add melted butter and mix to combine. Press biscuit mixture evenly over the base of cake tin. Refrigerate for about 20 minutes. Filling Using an electric mixer, beat cream cheese until smooth. Add fine sugar and lime@lemon juice and vanilla extract, and beat for 2 minutes. Add whipped cream and beat for a further 5 minutes or until mixture has thickened. Spoon mixture over refrigerated biscuit base. Meanwhile, put in agar-agar in sauce pan, add in water, and cook over medium heat but never let them boil (as it going to boil, reduce the heat). At the same time, cook the mango puree (same method as agar-agar). Later pour it into the agar-agar mixture, when they begin to boil, reduce the heat, flame for about 3-4 minutes, cool in room temperature and pour over cream cheese mixture and swirl it thoroughly or perhaps to create marble effect, they can be swirled with a sharp pointed knife. Cover cake tin with plastic wrap and place in freezer for 3-4 hours. Mango glaze Put in all in sauce pan, cook over medium heat, when they begin to boil, reduce the heat and flame for 3-4 minutes, cool in room temperature. Spread the glaze over the frozen cheesecake and keep on freezing overnight. Remove cheesecake to a plate and let it stand for 15 minutes at room temperature. |
